Title: Steamed Rice Cupcakes

Yield: 8 Servings

3cRice flour*
1cBrown OR white sugar
1 1/2cWater
3/4cAll Purpose Flour
1tbBaking powder

*If rice flour is unavailable, soak 3 cups of long grained rice in water for six hours, drain then blend it in a blender until very fine.

Dissolve the sugar in the water in a mixing bowl. Add this to the rice flour and mix well, add sifted all purpose flour and baking powder, stir until thoroughly mixed.

Divide the batter into 8 small bowls.

Place the bowls in a steamer and steam over boiling water for about 30 minutes. Allow the cakes to cool then remove from steamer.

Slice the cakes and fry or steam them when ready to serve.

Fruit flavor gelatin may be added for color and taste.

These cakes are usually served at New Year or festive occasions.
